🌎 VEGAN TRAVEL ΤΡΙΤΗ! ✈️

🇪🇸🇮🇹🇬🇷 Gonna name this a ‘Mediterranean’ dish as a result of it pulls on a couple of beautiful cultures! 🇪🇸 🇮🇹 🇬🇷

Seared ‘Scallops’ with lemon, pesto, and what was meant to be a pea purée however my new meals processor is totally wank 😩

Though the plating didn’t go to plan, this tasted wonderful!

I used king oyster mushroom stems which have an excellent scallop-y texture, cooked them on a excessive warmth in plant butter, garlic, chilli’s, paprika and paprika. Sprinkle with salt and pepper, and a squeeze of lemon and get a chomp on!

  1. Little golden discs of perfection 😍 I honestly wouldn’t have known the puree was not pureed enough. At least we can always go hipster and call it a pea “smash” haha
