Say hiya to my summer season obsession, this PEACH CAPRESE SALAD WITH PROSCIUTTO & ARUGULA has been my go-to for a light-weight and refreshing snack or meal. We significantly make a peach caprese salad nearly each night time with dinner however I made a decision to place it over arugula and add some prosciutto to fluff it up a bit and I’m soooo glad I did 🤤

What you want:
– one peach, sliced
– one tomato, sliced
– about two cups of arugula
– two items of prosciutto sliced after which rolled up
– drizzle of EVOO & a drizzle of balsamic vinegar
– pinch of salt and freshly floor black pepper
– be happy so as to add some mozz, too!

Like I mentioned, we often simply toss some peaches and tomatoes in balsamic and evoo with salt and pep, so it is best to undoubtedly attempt that too! It’s AMAZING
