Roasted Vegetable & Chickpea Salad 🥗

I popped all the ing onto a single tray to roast with smoked paprika, pepper, smoked salt, garlic powder and a great slug of olive oil;

– chickpeas
– aubergine
– mushrooms
– blended peppers
– crimson onion

Then I added this to a blended leaf salad with massaged kale, spinach, rocket, shredded beetroot, cress and mini plum vine tomatoes 💯

🌞It’s lastly sunny sufficient for me crave salad!! 🌞

Though it’s meant to be snowing 🌨 quickly so the winter heaters might make a sudden reappearance any day 😂
