♻️ LETS TALK ABOUT LEFTOVERS & FOOD WASTE 🌱

Each single week I collect all of the tragic bits of veg from the depths of my salad crisper and conjure them right into a delicious soup and fill my physique with all of the goodness it craves by the hands of my horrible life-style decisions.

Broccoli on the cusp of going yellow? Soup.

Drained trying cabbage or root veg? Soup.

Cauliflower browning a bit? ISS GONNA BE A GOOD SOUP BABY.

This was made with half a dodgy broccoli, half a leftover onion, a handful of kale, a veg inventory dice, about four past-it spring onions, 1 smol carrot and a pair of new potatoes that I chopped the tentacles off – plus just a few spoonfuls of nooch! And it tasted BANGING!

It doesn’t matter what the substances stepping into are, right here is the idea of all good soups based on ME:

• Virtually at all times add sautéed onions (and a stick of celery in case you have one)
• Don’t be scared to make use of all of the ‘bits’ – cauliflower leaves and brocoli stalks are all gooood
• Your soup NEEDS bouillon or a vegetable inventory dice, plus salt, pepper and ALWAYS dietary yeast!!!
• For a thicker texture, chuck in a potato
• Herbs & spices are your pal
• Roasting sure soup substances first brings out a richer flavour
• Additional creaminess? A little bit of courgette or plant milk! Perhaps even a handful of grated vegan cheez
• Need it to look rustic? Set just a few spoonfuls of the combination apart, after which add again in as soon as blended.
• Wish to tart it up? Drizzle some plant cream, or garlic/chilli oil on prime and serve with herbs or do-it-yourself croutons.
• Roughly chop stale bread, drizzle with olive oil, salt, pepper and herbs and bake for scrumptious do-it-yourself croutons. NO WASTE LOADSA TASTE!
